In the municipality of El Sauzal, about 500 metres above sea level, you will find this vineyard standing on a rocky but very rich soil, which is the result of the volcano and the passage of time. Although the wine cellars were built in 1983, the family tradition of the Monje Winery dates back to 1750. The old oak barrels are still used to ferment and age the traditional red wines, combining the old methods with modern technology.
